Peach Salad (with a kick 🌶️)
/Ahh the end of summer in Canada: warm days, cooler nights, fewer mosquitos, and fresh juicy peaches! This is a perfect dish to eat outside, by yourself or with someone else.
I’ve been enjoying this late summer salad (literally, it’s been on repeat!), with the variety of flavours. Sweet, salty, spicy - this dish has it all.
Play around with the portions of peaches vs tomatoes, depending on your preference. I’ve also tried this recipe with ricotta and boccaccini - both work well. And don’t forget the secret ingredient!
Sweet & Spicy Peach + Tomato (GF, veg)
1 fresh, ripe peach
7-9 cherry or grape tomatoes
5 leaves basil, torn
1 burratini (mini burrata)
olive oil
salt & pepper to taste
drizzle hot honey 🌶️🍯
Slice the peach and tomatoes into bite sized pieces and arrange on a plate with the soft cheese, like the burratini, in the middle. Place the torn basil leaves over everything then top with olive oil. Use salt & pepper to your liking. Then drizzle the whole plate with hot honey. Eat and enjoy!
